Here is what I do with Spain:
Age 1
9-10 vills to food, 1 or 2 to wood (1 if you start with 100 wood, 2 if you start with 0 wood) and the rest to gold making a total of 18 pop in age 1. Age with 500 food. Research hunting dogs then placer mines.
Transition
Move 1-2 vills from food to gold, and move your wood gatherers to gold if you think you need more. Once you have 1000 gold put the gold gatherers on wood.
Age 2
When the 500 food comes, gather it with like 3-5 vills and go straight to age 3. (Your TC will be idle for like 10 sec, big deal you still have over 30 min left)
Transition
Research Log Flume asap. Then get everyone on wood except for about 8-9 guys on food. build a house.
Age 3
Build 2 TCs and start getting market upgrades except for the last wood one. Put like 20 guys on food and start training a couple guys to wood (for upgrades) and the rest to gold. You should be able to go to age 4 with like 44-47 pop. Age with falconets or lancers.
Transition
Keep training vills and building houses
Age 4
Get the last wood upgrade. Depending on the map, you might have to build mills before you go to age 5, so get some wood gatherers and start getting mill upgrades. Balance your eco so you can advance get to age 5 at around 20 min at the lastest.. You probably still have villagers to train while you are aging. Age with 2000 coin
Transition
Keep training settlers and building houses and stuff. Get your pop limit up to 110 by the time you get to age 5, that way you have enough pop for max vills.
Age 5
Get capitol upgrades and stuff. You need more coin gatherers than food, so make sure your eco is balanced. Get like 1-2 eco walls and like 5 outer walls, that should be enough. Build a church is you haven't already (that probably should be done sooner) and research Mercantilism. Your score should get to like 1800 about by the end of treaty. Score really doesn't matter too much with Spain cause their eco sucks anyways and their military dominates.

Your first way should be like 10 missionries, 30 natives, any combination of goons, lancers, rods and skirms, 2 falcs (if you aged up with them) maybe more if you want, and then the units you get from the church upgrades. This army ends up being huge and it will help you establish a good position after treaty ends. Control natives, get on offense, that kind of stuff. Build upgraded outposts where you fight, wall the map as much as you can, and drain your opponents eco. Hope this helps.
