You need Hussars to kill Grens. Ranged infantry are worthless i this situation, or if you have only dragoons, put them into melee mode and attack with them, they have a lower attack but get a bonus vs Artillery. I think Grens have the artillery tag if I am not mistaken.

Make hussars, and pikes. use hussars to kill x-bow and uhlans, use pikes to destroy his base. Then try to raid his settler wagons.
Germans are an OP civ. High resource gathering and powerful units. The only way to beat him is to either outboom him or counter him.
You cannot use curs vs germany because of anticav, fyi

The simple strategy is
#1 build a barracks,
#2 build an army.
It is really that simple.
Send military units from your HC if you need them right away, don't waste your shipments.

x-bows and rodeleros are the only age2 counters. Archaic archers simply destroy ranged cavalry. That would include the native equivilents. Pikes would counter them but are too slow.

Otto would be in age 3 with veteran Janni and a few spahi, x-bows will not work. You need goons and veteren muskets, with 2 cannon. Use Unction and you will easily beat his units.

No in age2 you started with 100 wood, so the only thing you can do is build a lumbermill first. usually you would build a house next and scout the map with your sheep for hunts and ore.

I always wished that Nomad in age3 started like in age2. You start with no resources and just 3 villies.
In Land nomad you had to first build a lumber camp and then when you could choose to make a towncenter, or build homes, or build a barracks rush with militia men.
